One Pot Tuscan Shrimp Pasta

Easy, 30-minute pasta dish is packed with colorful veggies and lean protein all in a creamy sauce

Cook Time 25 minutes

Ingredients
  

  • 2 tbsp olive oil
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped sun-dried tomatoes
  • 1 tsp dried oregano
  • 2 tsp minced garlic
  • 1 package dry pasta
  • 4 cups chicken broth
  • 2 cups milk
  • 2 cups fresh spinach
  • 1/2 cup parmesan cheese
  • 1 lb thawed, raw shrimp, peeled and tails removed

Method
 

  1. In a large pot, heat olive oil over medium heat. Add onion, sun-dried tomatoes, oregano and garlic, mix well and cook for 3-5 minutes.
  2. Add 1 package of pasta, then 4 cups of broth and 2 cups of milk. Cover and allow to simmer for 10-12 minutes until noodles are soft. 
  3. Stir in spinach, parmesan cheese and shrimp until spinach is wilted, cheese is melted and shrimp turn pink, about 5 minutes.
  4. Serve warm, top with extra Parmesan or red pepper flakes if desired
