Ingredients

Serves 4

  • 1 lb of pork tenderloin 
  • 2 Ramen noodle packets
  • 2 cups kimchi 
  • 2 cups fresh spinach 
  • 3 garlic cloves, minced 
  • 1/2 yellow onion, chopped into bite size pieces
  • 2 tbsp avocado oil
  • 2 tbsp soy sauce
  • 2 tsp sugar
  • 1 can chickpeas, drained and rinsed under cold water for 2 minutes to remove up to 40% sodium 
  • 1/2 cup green onions
  • 1/4 cup water 

Instructions:

  1. Cook the noodles according to the package instructions. Drain and set aside.
  1. On a large baking sheet, dump rinsed and drained chickpeas and spread into a single layer, coat with avocado oil and sprinkle with salt and pepper. Bake on 375 for 45 minutes, shaking chickpeas every 15 minutes until crispy.
  2. Heat a large skillet over medium-high heat. Add the oil, onions and garlic. Cook onions and garlic until softened, about 1 minute. Add the ground pork. Cook until the pork is browned, and meat thermometer reaches 145 degrees, 5-8 minutes.
  3. Reduce heat to medium. Add the water, soy sauce, and sugar. Stir in the noodles and cook until the noodles are heated through, 1-2 minutes.
  4. Fold in kimchi, spinach and green onions, cook for an additional minute to warm kimchi.and wilt spinach.  Plate, garnish with crispy chickpeas and enjoy!
