Ingredients
  

  • 1 lb pork tenderloin
  • 2 packets ramen noodles
  • 2 cups fresh spinach
  • 2 cups kimchi
  • 3 cloves garlic, minced
  • 1/2 each yellow onion, diced into bite size pieces
  • 2 tbsp avocado oil
  • 2 tbsp soy sauce
  • 2 tsp sugar
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup green onions, diced into bite size pieces
  • 1/4 cup water

Method
 

  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. On a large baking sheet, dump rinsed and drained chickpeas and spread into a single layer, coat with avocado oil and sprinkle with salt and pepper. Bake on 375 for 45 minutes, shaking chickpeas every 15 minutes until crispy.
  3. Heat a large skillet over medium-high heat. Add the oil, onions and garlic. Cook onions and garlic until softened, about 1 minute. Add the ground pork. Cook until the pork is browned, and meat thermometer reaches 145 degrees, 5-8 minutes.

  5. Fold in kimchi, spinach and green onions, cook for an additional minute to warm kimchi.and wilt spinach.  Plate, garnish with crispy chickpeas and enjoy!
