High Protein Blueberry Sheetpan Pancakes

Ingredients
  

  • 2 cups protein pancake mix
  • 2 cups milk
  • 4 each whole eggs
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Avocado oil cooking spray

Method
 

  1. In a large mixing bowl, combine pancake mix, milk, eggs, protein powder and vanilla extract and mix well
  2. Spray a large baking sheet with avocado oil and pour protein pancake batter onto the sheet pan, use a spatula to evenly distribute the batter
  3. Top with blueberries and bake for 25 minutes on 425 until golden brown
  4. Let cool for 5 minutes and then cut into 12 even squares and enjoy or freeze for a ready to eat option for busy weekday mornings
