Method
- In a large mixing bowl, combine pancake mix, milk, eggs, protein powder and vanilla extract and mix well
- Spray a large baking sheet with avocado oil and pour protein pancake batter onto the sheet pan, use a spatula to evenly distribute the batter
- Top with blueberries and bake for 25 minutes on 425 until golden brown
- Let cool for 5 minutes and then cut into 12 even squares and enjoy or freeze for a ready to eat option for busy weekday mornings
