Ingredients
  

  • Avocado oil cooking spray
  • 2 each small sweet potatoes
  • 1 pinch salt and pepper
  • 1 pinch garlic powder
  • 1 head romaine lettuce
  • 1 each diced, Roma tomato
  • 1/2 each thinly sliced, red onion
  • 1 pound ground beef
  • 5 each bread and butter pickles
  • 1 tsp ketchup
  • 1 tsp mustard

Method
 

  1. Heat oven to 425. Line a baking sheet with aluminum foil and spray with avocado oil and set aside
  2. Wash and pat dry each sweet potato, chop into bite size pieces, spray with avocado oil and season with a pinch of salt, pepper and garlic powder. Bake in the oven for 15 minutes until potatoes are golden brown
  3. Rinse romaine lettuce, chop into bite size pieces and evenly distribute between 4 large bowls
  4. Chop roma tomatoes and slice red onion and place next to the romaine lettuce in each burger bowl
  5. Using a medium sauté pan, brown your ground beef until cooked through and temperature reaches 165 degrees, season with a pinch of salt, pepper and garlic powder, mix well and add 1 cup of ground beef to each burger bowl
  6. Remove sweet potatoes from the oven, allow to cool for 5 minutes and add 1/2 cup of sweet potato cubes to each burger bowl
  7. Top burger bowls with pickles, drizzle with ketchup and mustard and enjoy
